Why did Galić Code Black 639 sparkling wine receive the most nominations in the selection of Croatia’s 100 best wines?

Sparkling wines are, as a rule, wines offered up front – they refresh, whet the appetite and are most often exciting and cheerful, yet very rarely made for contemplation. Galić’s Code Black is precisely the kind of sparkling wine that unquestionably makes you think and demands to be understood. It is made without the slightest compromise, which narrows its circle of drinkers, yet reaches and moves the true lovers of sparkling wine.

The base wine blends, in equal parts, the two great Champagne varieties Chardonnay and Pinot Noir (crni pinot), which as a mature wine were later bottled and left for five years of ageing on the lees. Made in the Champagne style, it shows layered but moderately intense aromatics, high freshness, serious structure and a creamy texture. The nose is ripe and refined – white fruit, brioche, bread crust and butter.

The palate is full and rich, with a touch of sweetness that comes not from sugar but from complex alcohols. An ideal pressure of fine, persistent bubbles and high acidity lend it the freshness of a serious Champagne. Its complexity is lifted by a gentle bitterness on the memorable, long finish. This is a gastronomic wine, and with oyster season now open, Code Black will be an ideal choice; it will pair equally well with other seafood – above all salads and various raw-fish dishes – as well as with traditional cured-meat platters alongside young to medium-aged cheeses.
