Saint Benedict Bolfan Pinot Noir Rosé, a Pinot Noir sparkling wine marked by freshness, a fine bead and complex fruit aromas.

It shows a deep rosé hue, the pressure in the bottle is just as it should be and it beads beautifully in the glass. The nose is initially restrained, but fruit aromas of red berries and cherry emerge quickly, alongside discreet notes of white flowers. Lively, pronounced acidity lends freshness, while the fullness and structure come from high extract and ageing on fine lees after the second fermentation in the bottle. On the finish a pleasant bitterness appears, giving the wine an extra layer of complexity that true sparkling-wine lovers will readily recognise. It works as an aperitif, and pairs excellently with dishes such as cured-meat platters, young cheeses, cooked and raw salmon, tuna carpaccio and roast duck with mlinci (thin baked pasta sheets).
