The ideal expression of Ilok’s wine elegance is the Riesling 2021 from the Trs winery. Purity of style and varietal expression, shaped by the particular traits of the terroir, define this exciting wine. The soil composition and microclimate allowed the grapes to ripen evenly, retaining pronounced aromas and precious acidity. Eight grams of residual sugar were deliberately left unfermented, giving the wine extra fullness — a choice well justified by its pronounced acidity. The nose is led by peach and ripe apple, with a touch of citrus and the odd floral note.
The palate is rich and mouth-filling, with clearly defined acidity that carries a long, refreshing finish. Fermentation and maturation were carried out in stainless-steel tanks, with further ageing in bottle. Trs’s Riesling 2021 belongs to the class of wines that shine on their own, yet are also a serious partner to dishes such as crab, shellfish, assorted seafood salads, poached lamb and young goat’s cheese.
