Black Bull Ranch from Lekenik steps onto the world stage

Croatian beef has made a serious mark on the world gastronomic scene. Black Bull Ranch from Lekenik achieved an exceptional result at this year’s World Steak Challenge, one of the most prestigious global competitions devoted to beef quality, winning a gold medal for ribeye and a silver medal for sirloin.

Against producers from numerous countries around the world, meat from the Croatian farm showed that top quality is not reserved solely for the big global producers and the traditional meat regions. Behind this result stands the Birčić family and their long-standing work on developing premium domestic beef. For Black Bull Ranch this was a first appearance at the World Steak Challenge, and they immediately delivered a result that will be recorded as one of the more significant international successes of Croatian meat production.

From Lekenik to Amsterdam

The road to a world medal began at the ranch in Lekenik, far from the great gastronomic centres, the glamour and the glitter. In recent years Black Bull Ranch has systematically developed cattle breeding, with particular emphasis on genetics, feeding, animal welfare and meat quality. At the heart of their breeding programme is an F1 cross of wagyu and black angus, a combination that gives pronounced marbling, succulence, tenderness and a recognisable flavour. It was precisely this meat that was presented at the World Steak Challenge. For the competition they prepared meat from a steer, a castrated bull, which went through 45 days of dry ageing before being judged against the best producers from around the world. The result exceeded expectations. The ribeye of Black Bull Ranch won gold, while the sirloin was awarded silver.

“This recognition is not just a medal for us. It is confirmation of all the years of work, investment and learning. From the beginning we believed that meat of the highest quality could be produced in Croatia as well, and now we have international confirmation that we are on the right path,” they say proudly at Black Bull Ranch.

When quality speaks for itself

The World Steak Challenge matters especially because producers cannot rely on a story, a brand or packaging alone, since in the end it is what lands on the plate that decides. The meat goes through a rigorous judging process, with an expert international jury assessing its characteristics and quality after preparation, and that is exactly why the result of Black Bull Ranch carries particular weight. As unknown producers, arriving without any great announcement, they surprised everyone present, because what reached Amsterdam was not only a Croatian flag but a product that stood alongside the best steaks in the world and took two medals in the process.

Years of work behind the medal

Although success is often measured by a medal, the Birčić family point out that quality cannot be achieved overnight. It begins long before the meat reaches a butcher’s shop, a restaurant or a competition plate. It starts with the choice of genetics, continues through the manner of rearing and feeding, and ends with careful processing and ageing. That approach has been part of the philosophy of Black Bull Ranch from the outset.

“Our goal is not to produce ever larger quantities, but to develop a premium product of recognisable quality and origin. We want to show that a Croatian producer can make a product that will be of interest even to a demanding world market. These medals are great motivation for us to carry on,” says Siniša Birčić.

Croatia has something to offer the world

The success from Amsterdam comes at a time when there is ever more talk about the importance of domestic food production, traceability, the quality of ingredients and the creation of products with added value. Black Bull Ranch shows how traditional livestock farming can take on a new dimension through investment in knowledge, genetics, technology and the development of premium products.

Next stop: even more quality

Two medals on a first appearance are a strong incentive for the further development of Black Bull Ranch, but the ambition of the Birčić family does not stop at competition success. The focus remains on developing their own production chain, on meat quality and on creating a product that will be recognisable on both the Croatian and the world market.
